This is one of my mom’s favorite recipes and she wanted me to share it with you. It’s simple, easy, gluten free, and quick. We call the lettuce “backyard” lettuce because it, quite frankly, looks like something that would grow in your backyard. Enjoy.
Place the Spring Mix (backyard lettuce) in a large bowl. Add the chicken followed by the rip avocado. On top of that, squeeze the juice out of the lemon with the rind up so as to not have lemon seeds in your salad. Sprinkle the EVOO over the mixture and add the coarse sea salt and the pinch of pepper. Toss to combine and enjoy.
